Pumpkin:
Remove the middle of the pumpkin. Either remove the seeds from the "string" they are all attached to in the middle and pick off one-by-one. Or leave on their string and dry out as one whole clump. This method will take longer for the seeds to dry out completely.
Leave to dry in a warm summy spot until seeds are bone dry.
Remove outer dry pumpkin flesh.

This same method of removing seeds can also be applied to Zucchini (once the size of marrows) and cucumber.

Beans
Let the bean pod grow to a large size for the breed of bean you are growing.
remove off plant and leave the pod in a warm sunny spot until the whole thing is bone dry. This may take a couple f months.

Parsnip
Let the parsnip go to seed.
Place a bag over the seed head and then remove the seedball from the stalk.
Give head a good shaking.
Leave seeds in a warm dry place for a couple of weeks to dry out.
